I got this recipe from The Healthy Chef site and just changed a few of the ingredients. They are sooo tasty and make the perfect lunchbox treat for the kids. I was inspired to make this after having the matcha (green tea powder) pudding at an amazing Japanese restaurant called Ume in Surry Hills, which I went to with my parents. Unfortunately, I didn’t have any matcha powder at home so I used infused almond milk with green tea instead. This recipe should also work with 1-2 teaspoons of matcha powder instead of using the green tea leaves. I also added a tablespoon of the green tea leaves into the blender when mixing the pudding, but you can leave this out if you don’t like the texture of the leaves.

I even had my heart set on becoming a modelling agent until I decided to instead pursue a career in Health and Wellness. This recipe is finger licking good and is incredibly simple to make. It has only four ingredients and involves no cooking, just 4 hours in the fridge to allow the ‘bites’ to set.

I found the inspiration for this recipe on my new favourite recipe site Tales of a Kitchen and have just tweaked it a bit using the ingredients I had at home. As I made these for my graduation party, I doubled the ingredients to make 12 tarts.
