Tangy Apricot & Pistachio Slice

This recipe is delicious and completely foolproof! It will take you pretty much no time to throw together and you can keep it in the freezer to have on hand for when unexpected guests drop over.

1 cup dried apricots
1 cup pistachios with the shells off
¾ cup cashews
½ cup shredded coconut
Rind of 1 lemon
1 tbsp coconut oil – melted
1 tsp vanilla essence
1 tsp cinnamon
1 tsp salt

Topping (optional)
¼ cup shredded coconut
¼ cup pistachios


If you want the topping on your slice make this first: pop all ingredients in a food processor and pulse around 5-7 times until the pistachios are all crushed. Remove the mixture from the food processor and set aside.

To make the slice mixture throw all the ingredients into a food processor and blend until all ingredients are chopped up very finely, then test the mixture to make sure it sticks together well.

Press the mixture into a square tin lined with baking paper, making sure it’s distributed evenly around the tin. If you made the topping, sprinkle it on top and press it into the slice mixture. Pop it in the freezer for at least an hour.

Once you take it out of the freezer remove it from the tin and chop it up into little pieces to enjoy! You can store this in the fridge or freezer.
