Gluten Free Gingerbread

Gluten Free Ginger Bread

Just because you don’t want to or can’t eat gluten doesn’t mean you can’t enjoy the Christmas classics this year like gingerbread. This recipe is full of so much spice and flavour that it will be a definite crowd-pleaser this silly season.

Ingredients

2 cups gluten free flour
1 tsp baking powder
1 tbsp ground ginger (use a bit less if you don’t want the ginger flavour too strong)
2 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla essence
2 tbsp orange rind
1/4 cup coconut oil, melted
1/4 molasses
1/2 cup raw honey or rice malt syrup
1 egg, whisked or for a vegan option mix mix 2 tbsp. of chia flour with ½ cup of cold water and let it stand for about 30 minutes

Method 

Preheat oven to 180°C.

Mix the flour, baking powder, ginger, cinnamon and nutmeg until well combined in a mixing bowl with a wooden spoon.

Make a well in the middle of the dry mixture and add the rest of the ingredients. Fold the mixture through until it is all combined and has created a dough like consistency. If the mixture seems a bit too wet you can put it in the freezer for around 10 minutes so it firms up or mix in a bit more flour.

Take a flat surface like a chopping board and place some baking paper on top. Mould the dough mixture into a big ball and spoon it onto the center of the baking paper.

Place another sheet of baking paper (it should be the same size as the other sheet) on top of the dough ball. Use a rolling pin to roll out the dough so it is evenly flat and is around 1-1.5cm in thickness. Remove the top part of the baking paper.

To make the shapes take whatever shaped cookie cutter you want and dip it in some flour.

Press the cutter into the dough and wriggle it around slightly then carefully remove it from the dough.

Continue this until there is no room left on the dough. Carefully remove the excess parts of the dough that are around the shapes and then transfer the baking sheet onto a baking tray.

You can then take the excess dough and repeat the above steps to create more cookies until all the dough is used up.

Place the baking tray in the oven for 5 -10 minutes or until firm and golden on top. Remove the tray from the oven and leave to cool for at least 10 minutes then they’re ready to enjoy!
