Tell us a little bit about yourself, your website and what you do.
I am a busy wife and mum of three energetic boys who keep me on the go. I enjoy entertaining family and friends and, growing up in a European family, have always loved to cook and create new dishes. I love veggie gardening and am inspired by a healthy way of eating, the benefits of organics and super foods. Since October last year I have been studying at the Institute for Integrative Nutrition and have been training to become a Holistic Health Coach. As many of you may know, I am on a detox (now on day 8) so I have been trying to get as creative as possible with my food to avoid cravings and boredom. These pikelets definitely hit the spot! I made this entrée for a dinner party (when I say dinner party I really mean myself and two others) a few weeks ago and it was a hit. It is so simple and easy to do. It fed three of us, but we eat like horses so I would say this serves about 4-5. You can use whatever cheese you want and however much you like. I have just put down my own measurements below. This weekend I cooked a paleo style three course meal for two of my friends. As we are big fans of Mexican food (isn’t everyone?), I thought I would do a grain free, gluten free and carbohydrate free (which my type 1 diabetic Editor loved) version of soft tacos. The tacos are pretty much just made from cauliflower and eggs and taste delicious. I got the inspiration for these from an awesome website called Empowered Sustenance and just added some extra herbs and spices to the recipe. I have also included the recipes for the guacamole, mince and salsa in this post.
