Miso Soup with Zucchini Noodles

misoOver the past few months I have been consuming very minimal animal products which has pushed me to get more creative with my meals. This is one of my favourite vegan meals because it’s delicious and It’s a great portable lunch option for work. Just put all the ingredients into a thermos, when you’re ready to eat it add hot water, give it a shake and you’re good to go.

Spaghetti Squash with Tomato, Mushroom and Basil Sauce


I have been wanting to make Spaghetti Squash for ages, but I only just came across it in the store yesterday. Naturally, I was extremely excited and couldn’t wait until dinner time to make this recipe, so I ended up eating dinner at 3pm!

Spaghetti Squash is a great low carb natural alternative to spaghetti and in my opinion tastes so much better. It also contains a wide range of vitamins including vitamins A, C, B-6 and K, plus approximately 2.2g of fibre per cup.
